Last week Kaileb and I noticed some mint growing in our front yard garden. We didn't plant it but I imagine someone who loved this house before us did. If you've ever grown mint, you know that it grows where ever it pleases, so it might have just made it's way over on it's own.
I love mint in small doses. It's good in ice cream, mojitos, tea, and water. I think those are about the only ways I use mint. Some people wrap it in rice paper with other ingredients and have it that way. There are many, many great uses for mint, but I just don't love it! I guess I should start trying to because mint has a habit of taking over every space.
There isn't much growing just yet. We picked a few leaves and brought them in to be washed. I had a few left over raspberries left in the refrigerator and squished them lightly between my fingers before adding them to the bottle. The mint leaves I just put in there without bruising or muddling. If you wanted a stronger mint flavor then crushing up the leaves a bit to release more flavor would be the right idea. However, to prevent raspberry seeds from getting into your glass, I wouldn't recommend muddling them. I let it sit in the refrigerator this way for a few hours and then we all enjoyed a nice refreshing glass of raspberry mint water.
I love all of the beautiful, scented, edible plants nature holds.
