Ancient Roman honey cakes












We're wrapping up our Core B in Sonlight. It took almost an entire year to get through it, mostly due to summer. I thought making a dessert worthy of Ancient Rome would make everyone stay interested for just a bit longer! I found a recipe online but it was just too much work for the two that my children were going to consume. These were quick, fun, and made the kids think and talk about the different foods we have now and how special something like this must have been.

If you'd like to make Honey Cakes, here's the recipe:

1-2 rolls of pastry dough
1 container of Ricotta cheese
4-5 T honey
slivered almonds for topping

Roll out the dough and make circles with a large cup or whatever you've got. I don't have any fancy baking tools! Place in greased muffin tin in a bowl shape.
Mix honey and ricotta until you reach a desired sweetness.
Fill each pastry cup with honey and ricotta mixture and bake according to pastry dough instructions.
Drizzle the top with honey and almonds once cooled. Enjoy!

The kids liked them, but found the texture a bit outside the comfort zone.
