Easy homemade mini pizza

Making 3-5 meals a day for everyone is a chore in itself.  However, I really love to cook for my family.  It brings me a ton of joy to fill their bellies!  What I don't love is the clean-up! For lunch this week the kids wanted pizza.  I didn't really have time to make pizza dough so I made these individual kids pizzas.  I customized them according to what they like and what I like.  It was a pretty simple and quick lunch.  We just needed a few items.


Marinara, English muffins (not pictured), mozzarella, mini pepperoni, Parmesan, and some spinach.

I sliced each English muffin in half and placed them on a cookie sheet.


I had some help spreading around the marinara.


I sliced up some mozzarella and put it on each one.  For a more adult pizza I put spinach and some Parmesan cheese on mine.  



After placing on all our toppings, I placed them under the broiler for about 3 minutes.


Tornado K enjoyed his mini pepperoni pizzas.


Little Lady ate up her cheesy mozzarella pizza! 


These were a fun and quick way to give everyone something they like for lunch. (That doesn't always happen around here!) Will you try making mini pizzas?
