Trim Healthy Tuesday: Portobello Mushroom Pizza



Nick and I switched over to the Trim Healthy Mama style of eating a while ago.  Besides the fact that I get to eat so many wonderful things and feel totally satisfied after a meal, I've been dropping pounds baby! To be perfectly honest I love to exercise but I just haven't wanted to fit it into my schedule. It probably means I wouldn't get to do a bedtime story or I'd miss dinner with everyone. At this point in my life a good workout just ain't happenin'. I know many moms who still keep all those things in their schedule and still make time to work out and that's AWESOME! I am just not going to pretend like I've got that going on right now.

In order to drop a few extra pounds, I've been using the fuel cycle provided in the Trim Healthy Mama book. There are two days in the middle that are strict Fuel Pull days when carbs and fats are very limited. I have a hard time with those because I have to get a little more creative. Some days, like today, I don't feel like getting very creative. Why hasn't someone invented a product that when I open the refrigerator on my non-creative days, gives me a fantastic meal? It probably would cost more than my left kidney. I guess I should just forget about said invention.

Soooo, here is a meal I pulled together for a Fuel Pull lunch.  There is a portobello mushroom recipe in the THM book,  but I didn't make mine the exact some way.

If you want to make this lovely pizza for yourself you'll need:

  • 1 large portobello mushroom cap
  • Pizza sauce (I used a bit of Hunt's tomato sauce with basil and garlic)
  • Skim mozzerella
  • Any non-starchy veggies you'd like (Spinach, zucchini, yellow squash)
Preheat your oven to 350 degrees. 

Place your mushroom stem side up and pour a couple of tablespoons of your choice of tomato sauce on and spread it around. 

Throw on (gently now!) some skim mozzarella and layer your vegetables on top.  

Cook for about 20 minutes, turning on your broiler for the last couple to get everything sizzling!
